If you’re a fan of the Grateful Dead(hey Adam!), shirts with pineapples on them, whiskey only if it’s bourbon, and laughing at bad dad jokes, well then you probably already know Bert so why are we even talking right now? But on the off-chance you DON’T know this dude, well: the best way to describe him is that he’s just like the lady in the Pina Colada song— you know, the one you were always looking for but then you realized was there the whole time(and who likes getting caught in the rain, is not into yoga, and likes making love at… anyway you get the picture)
Bert Hamilton was born and raised in Southern Alabama (yes, he’s a college sports fan, and no, it’s not UNC or Duke). Food and service came naturally to him— mom taught him how to cook perfect eggs, dad taught him how to grill the perfect steak, and he grew up in a house that was constantly entertaining people. But then he moved to NC to attend Brevard College, and though we’re fairly positive he did occasionally study and stuff, he also followed around jam bands like Phish and Widespread Panic, which really manifests itself these days when you say things like “Bert, it’s your turn to pick a song”.
After spending some years traveling all over the Southeast to open over 10 locations of the Tex-Mex restaurant Chuy’s, he and his family finally settled here in Hillsborough in 2013. We’re really glad he did! Bert joined the gang on Churton Street in 2015, and has pretty much been lifting everyone’s spirits around here ever since. He’s a happy-go-lucky dude, he’s got what the kids these days call mad skillz in both the kitchen and behind the bar, and you’re likely to find him roaming around James Pharmacy most days of the week. Stop him for a quick chat next time you spot him, and if you’re lucky he’ll share his secret pozole recipe with you, or maybe tell you that one joke…
